Bombay Masala Toast sandwich is a super delicious street side food that is very common on the streets of Mumbai. Take one look at this delicious sandwich and you will quickly realize that this is not your traditional vegetarian sandwich. This is something special; it’s called the Bombay Sandwich - Vegetable Sandwich . Loaded with sliced veggies, masala aloo( Potato) and topped with spicy chutney and sev.

What is a Bombay Sandwich - Vegetable Masala Sandwich?
Bombay sandwich as the name suggests is a sandwich specifically originating from Mumbai or Bombay as it used to be called before the renaming happened. Love a good sandwich ? Look no further; this simple vegetable sandwich from the streets of Mumbai is bursting with flavors.
The Bombay masala toast sandwich recipes are typically prepared in a unique toaster which is very much used by most Mumbai street food vendors. The toaster helps gives a crisp and cone triangle shape by locking the sides of toast. I have used a similar toaster for this recipe however, you can enjoy this sandwich by making it on a cast iron pan or a grilled sandwich maker.
Ingredients
There are a few things that make this sandwich way different than the regular vegetable sandwiches. It’s the Bombay Sandwich Chutney, and the preparation of the filling (masala aloo). Please refer to the recipe card for the ingredients and measurements. .

Instructions
Prepare the Aloo Masala
- Heat oil in a pan on medium heat.
- Add mustard seeds and let them splutter, then add cumin seeds, curry leaves, and chopped green chilies.
- Stir in hing and turmeric.
- Add the mashed potatoes along with salt, garam masala, and coriander powder. Mix well until evenly combined.
- Garnish with fresh cilantro and let it cool.

Assemble the Sandwich
- Take a slice of bread and spread softened butter evenly.
- Add a layer of green chutney .
- Place a few onion rings on the chutney.
- Spread about 2-3 tablespoons of the aloo masala mixture.
- Top with tomato and capsicum slices.
- Sprinkle some sandwich masala or chaat masala. You can make your own sandwich masala at home. Check out our Bombay Sandwich recipe for the steps
- Take another bread slice, spread butter and chutney, and place it chutney-side down to close the sandwich.

Grill It Up
- Preheat your sandwich toaster or electric grill.
- Lightly brush the outside of both bread slices with butter.
- Place the sandwich in the toaster or grill, close the lid, and cook on medium heat until golden and crispy on both sides (about 3-4 minutes).
Serve & Enjoy
- Remove the sandwich and brush with a bit more butter (optional but worth it!).
- Sprinkle a generous amount of nylon sev on top for that classic Mumbai touch.
- Slice diagonally and serve hot with green chutney, spicy garlic chutney, or ketchup.

Grill using an Electric Sandwich Maker (Grill or Toastie Press)
- Preheat the sandwich maker for a few minutes.
- Assemble the sandwich as outlined in previous steps:
- Close the sandwich and place it in the sandwich maker.
- Press it shut and grill for 3-5 minutes or until golden brown and crisp.
- Carefully take it out, cut into halves or triangles, and serve hot with chutney and ketchup!
Grill using a regular Pan or Tawa
- Assemble the sandwich the same way as above
- Heat a non-stick pan or tawa on medium flame.
- Add a little butter or ghee to the pan.
- Place the sandwich in the pan and press down gently with a spatula or another flat pan for even toasting.
- Toast for 2-3 minutes on one side until golden and crisp.
- Flip carefully, add more butter if needed, and toast the other side the same way.
- Once both sides are crisp and golden, remove, slice, and serve. Don’t rush it-low to medium flame ensures the sandwich crisps up without burning!

Thinking about what to put in your kids lunchbox? I can assure you that your kid will love to see this in the lunchbox. Most importantly it will be all gobbled up. My son R3 loves to see this Bombay sandwich in his lunch box and when I do send it in the lunch box, I know it will come back empty. It is not too difficult to make and comes together very fast.

Top Tip
Add a little extra butter on the outside of the bread for an extra crispy crust!

- For Potato Filling
- 2 teaspoon oil
- One teaspoon cumin seeds
- 1 inch ginger /chopped
- Half ½ teaspoon turmeric powder
- 3 boiled potato/ mashed
- 1 teaspoon chaat masala
- salt to taste
- some coriander leaves/ chopped
- Other Ingredients
- 8 slice bread white / brown/ Udis for gluten free bread
- ¼ cup green chutney
- 1 onion sliced
- One 1 tomato sliced
- 8 big capsicum rings
- ¼ cup sev
- 3 teaspoon butter/vegan butter of your choice
- 1 tablespoon chaat masala
Instructions
For boiling the Potato
- You can boil the potato in the instant pot. Follow the instant pot instructions here
For the Potato Stuffing
- In a medium pan heat 2 teaspoon oil and add Cumin seeds / jeera, chopped ginger and saute.
- Add the boiled and mashed potato.
- add Salt to taste ,
- Add turmeric, ½ teaspoon chaat masala and chopped cilantro and mix well.
- Aloo/ Potato masala stuffing is ready.
Steps for The Sandwich
- Spread butter on the bread slices , then the green chutney.
- Top on one bread slice with 2 slices of tomato and 2 slices of onion.
- Spread Aloo / Potato masala evenly on the bread.
- Top with 1 ring of capsicum and sprinkle chaat masala.
- Cover with another bread slices and spread some butter on the top of the bread.
- Toast the sandwich till its golden and crispy
- Cut the masala toast sandwich into 4 pieces
- finally, sprinkle sev and chaat masala before serving masala toast sandwich
